Wholes/Halves

Buying beef in bulk allows you to customize your meat exactly how you want it and the pricier cuts (ie, tenderloins), are able to be diluted in cost due to the sheer amount of beef you are getting. You will get a mix of all cuts possible on a steer in this way.

Amount of meat you receive varies by the animal and method of cutting, but in general, for grass finished, dry aged beef it is around 60% of the hanging weight of the animal.

Our average, however, is 63.5% for meat and 75% overall yield!!!

Buying in bulk will average savings of 20-35% over individual cuts.

Hanging weights on our steers are currently averaging around 500 lbs for a WHOLE and 250 lbs for a HALF.

Actual packaged take home will average around 340-400 lbs on a whole or 170-200 lbs on a half.

(An order consisting of more or mostly bone-in cuts will result in more take-home meat, and a mostly ground or boneless order will result in less take home meat.

Additionally, do not discount the value of the extra fat and bones that can be utilized from your steer. The addition of these items fills out your hanging weight.)

Due to the dry aging, 1 lb of our beef (finished and packaged) is comparable to approximately 1 1/4 lbs of typical beef purchased at the store. The dry aging dehydrates the beef somewhat and makes it less prone to shrinkage during cooking, while intensifying the “beefy” flavor. So 100 lbs of beef from Glory 7 can be compared to around 125 lbs of beef cut in the traditional “wet” way.

Approximately 10 cu feet of freezer space is needed to store a whole steer of this breed.

Your beef will be processed USDA, and come labeled with your name, our name, what the cut is, weight on each package, and vacuum packed for secure storage.

A deposit of $500 secures a half of an animal, and a $1000 deposit secures a whole.

(Deposits are non-refundable, but may be transferable.)

You may choose your processing date up to a year in advance.

Pickup is generally 3 weeks, +/- from the date of processing of your steer.
